The farm is zoned in 3 main growing areas according to the soil types and microclimate. The Northwest FACING UPPER SLOPES, the Northeast FACING HILLS and the LOWER VALLEY below the main homestead. The altitude of the farm ranges between 180 and 310 metres above sea level.

The main soil types are Tukulu, Oakleaf, Glenrosa and Vilafontes and the terroir is well situated for the growing of Merlot, Cabernet sauvignon and Shiraz grapes.

25 Hectares of organic grape growing are in development since 2021. All the grapes are hand harvested, vinified and barrel matured in a small boutique cellar on the farm.

A selection from premium organic vineyards within a mountainous area in the Coastal Region.

The Cliffhanger 2023 Vintage respect the expectations of a wine lover who pursues a healthy lifestyle, with its organically grown grapes cultivated in a pristine environment. These healthy grape varieties do not require the need for any sulphur additions during the entire winemaking process.

The grapes were handpicked in the first week of March 2023, delivered in small lux boxes and air cooled to 15°C. After destemming the berries were crushed into open stainless-steel tanks, cooled down and cold soaked for 2 days with extended extraction.

After a selected yeast strain was added and with the commencing of fermentation, regular pump over and punch downs were applied to the fermenting grapes.

The preservatives used for this wine, during the production and cellaring, originates from a selection of various tannins with very high natural antioxidative proprieties that protects the wine from potential oxidation. These tannins are derived from rooibos and honeybush plants which are endemic and unique to the Cape Floral Kingdom.

Medical research shows organically produced red wine without the addition of SO2 have about 32% more active resveratrol, the natural antioxidant that can be absorbed by the human body.

In the deep, bright red colour of this wine lies good wholesomeness!

A medium bodied wine with a vibrantly deep red living colour due to no sulphur additions. Aromas of dark blue berries with notes of chocolate flavours, complemented by soft fruit tannins. Beautifully balanced and well-integrated oak flavours on the taste and the fact that no sulphur was added kept this wine youthful and alive!

This wine compliments food dishes like pasta and salads. Serving temperature 16 -18°C

2021 Canetsfontein Merlot

The grapes were picked early March 2021 from a single vineyard on the farm.

The vines were pruned to a two-bud spur. Green leaf vineyard practices, like suckering, were applied during the growing season, creating the best light exposure and shading position for the bunches and to stimulate optimal growth in the needed canopy.

Due to the dry season, all low-quality bunches were removed from the vine at a very early stage of ripening to maximize the potential of the remaining crop.

After destemming the berries were transferred into open stainless-steel tanks, cooled down and cold soaked for 2 days. Specially selected French yeast was used for fermentation and the grapes were punched down 3 times per day, till fermented dry. After fermentation the skins were pressed with a basket press and all the juice was transferred to stainless-steel tanks to settle and eventually to oak barrels for maturation.

The wine has a deep red colour. The bouquet shows integrated flavours of oak, spice and ripe blueberries. The palate is dense in structure, well supported by good oak with soft tannins and tones of blackberry and chocolate.

This wine, being full bodied and fleshy with soft tannins, is well suited for a range of good cheeses (preferable cow milk cheese), everyday traditional dishes (but not too spicy or hot) or any Mediterranean dish. Serving temperature 16-18 degrees Celsius

2020 Canetsfontein Merlot

Clone MO192. Block B is dominantly Oakleaf soils. Oakleafs are younger, deeper soils with high potential, commonly found close to flood plains, next to riverbeds or in pockets on foothills.

The wine has dark to medium red colour with a tint of orange on the edge. The bouquet shows integrated flavours of oak, spice and ripe raspberries. The palate has good structure, well supported by good oak with soft tannins and tones of raspberries and chocolate.

This wine, being medium bodied and fleshy with soft tannins, is well suited for a range of good cheeses (preferable cow milk cheese), everyday traditional dishes (but not too spicy or hot) or any Mediterranean dish. Serving temperature 16-18 degrees Celsius.

2018 Canetsfontein Merlot

All viticulture processes of Organic winemaking and vineyard practices was followed. The farm was already in the process of organic conversion. Supplementary water was just given in hot summer months.

Healthy handpicked grapes arrived at the cellar at 10 degrees Celsius on the morning of 8 March. After destemming the berries wash crushed into open stainless-steel tanks and was cool down further and was cold soaked for 2 days before it was inoculated with French yeast. The grapes were punched down 3 times a day until fermented dry. Then the skins were removed from the wine and received a light pressing in a basket press and then transferred to stainless steel tanks for settling and transferred again to oak barrels.

This Merlot compliments food dishes like duck, red meat pork pastas and salads. Also pairs well with fish. Serving temperature 16-18 degrees Celsius.
