Winemaker & Philosophy
“As winemaker I am very fond of our Merlot. I have been working for 17 years with this varietal at other farms, and regard Canetsfontein’s mountainous area as ideal for Merlot. We have deep, well drained and rocky soils. These lend a beautiful granular taste to the wines. Our north facing vineyards against the slopes receive full sun, but are cooled by the wind and mountains. These conditions produce a special combination of fruit and aftertaste. With these ingredients we intend to produce a well-balanced, but strong and fruitful wine with raspberry, cherry, mulberry and chocolaty undertones. To achieve that, our wines are carefully night-harvested, pressed at low pressures and handled with utmost care, all on the estate.
Our Merlot matures for 18 to 20 months in French oak barrels, approximately 40% first fills, before bottling. Best drinking quality should be reached after seven years from vintage date.”
